Recipes to Eat Your Way Through Finals

Regardless of if you are a first-semester freshmen or a senior graduating in just a few months, everyone gets a little homesick during finals week. And between spending hours in the library and the pictures of friends who are already home, it can be a long few days. So to keep the holiday spirit (and your sanity) alive, I’ve compiled a list of Christmas cookies that you can make in your dorm. All you need is a microwave and some basic ingredients.

Classic Chocolate Chip Cookie

1 tbsp. melted butter

1 tbsp. white sugar

1 tbsp. brown sugar

3 drops of vanilla

Pinch of salt

1 egg yolk

¼ cup of flour

2 tbsp. chocolate chips

Mix together the butter and sugars, followed by the vanilla, salt and egg yolk. Finally mix in the flour and chocolate chips.  Microwave for 40-60 seconds or until cookie looks done.

Tip: Substitute red and green M&Ms for the chocolate chips for a holiday upgrade to a classic dessert.

Christmas Sugar Cookie

1 tbsp. of butter, melted

2 tbsp. of granulated sugar

1/4 tsp. of pure vanilla extract

pinch of kosher salt

1 egg yolk

3 tbsp. of all purpose flour

1 tsp. of Christmas sprinkles or nonpareils

Frosting (optional)

Mix together the butter and sugar, followed by the vanilla, salt and egg yolk. Stir until combined. Finally mix in the flour and sprinkles. Microwave for 40-60 seconds or until cookie looks done. Frost with frosting if desired.

Peanut Butter Blossoms

1 tbsp. peanut butter

1 tbsp. butter

1 tbsp. white sugar

1 tbsp. brown sugar

Drop of vanilla

Pinch of salt

1 egg yolk

3 tbsp. Flour

1 Hershey’s kiss

In a microwave safe bowl or mug, place peanut butter and butter together and microwave for about 6 seconds, until melted – or almost melted – and then stir to combine. Add sugars, vanilla, salt and eggs. Mix in flour. Microwave for 40-60 seconds or until cookie looks done. Place Hershey’s kiss in center of warm cookie.

Chocolate Mint Cookie

1 tbsp. butter

1 tbsp. granulated sugar

1 tbsp. brown sugar, packed

1/4 tsp. vanilla

Pinch of salt

1 egg yolk

3 tbsp. flour

1 tbsp. cocoa

Andes Mint Candies, broken up

Place butter and sugars in a large microwaveable mug. Heat in the microwave until butter is melted, approximately 30 seconds. Add vanilla, salt, and egg yolk. Stir until combined. Add flour and cocoa and stir again. Add the Andes mint candy and mix just until evenly incorporated. Microwave for 40-60 seconds or until cookie looks done.
